Never before have I felt such a need to tell you about the colour of a Pacamara, before I had only ever seen red but times they are a' searching on the internet has not found any other yellow Pacamaras sold before. There are some countries growing some of this for seed stock, but no one as far advanced as the Mierisch family and delivering it as a commercial crop.

This came from last year and was sold in the special auction that was held this year called Los Favoritos Fincas Mierisch where some very special lots were sold to the highest bidder. We bought it there along with a company in Japan and this was the entire production. Because we stepped up then we are now at the front the line to get the new crop this year (as it grows into more and more commercial sizes). This also allows us to sell this coffee at half the price of last year, which is very exciting.

I first came across this yellow Pacamara three years ago, when visiting the farm. I begged Erwin to sell us some back then, but he told me they were using all the crop to create more seedling to plant more coffee, but that it would soon be available.

So why is this so rare? Well this is a freak natural mutation from red fruit to yellow and was spotted by a security guard on the farm. They isolated it, harvested the seeds for more seedlings, and kept going and going.

In the cup this is super exciting but also very complex. It is yellow fruit, think apricots, think peaches, think melon, but then throw into the mix the lovely cascade hops and mix in an aftertaste of blueberries. A super clean cup with a lingering aftertaste, a rare and special treat.

Medium roast. It will take a little not take a darker roast at all, keep it light, a tough one.
