This is a new coffee for us this year. It comes from our travels to Costa Rica in January. It was a four day whistle-stop tour where we visited around 15 producers, both new and old. On the first day we travelled straight from the airport to one of my favourite growing areas: the west valley region. A mill I have visited many times is Herbazu, a world famous place. Whilst visiting the mill, my friend and exporter Francisco suggested we visited a new micro mill in the grounds of Herbazu.
Carlos and Diana are part of the family Barantes, who own the mill and land surrounding the mill. In a quest to do their own thing, they have been given a part of the farm and some space to build their own mill.
When we arrived it was if the mill had just been taken out the wrapping, and it looked like on the patios, the concrete had just dried. In fact they were still building the drying tables.
The growing area is at at an altitude of 1500 meters above sea level and is planted 100% with yellow vila sarchi, a varietal that is very well suited to that area, and in fact is a native Costa Rican varietal which is a mutation of the Bourbon varietal that is known for its high cup quality.
It is processed using the honey process, which leaves lots of the mucilage on the coffee seed during the drying process. This lends itself to a sweeter, more rounded cup, but has its dangers if not in the hands of an experienced processor. Luckily Carlos learnt his trade at one of the most famous honey processor mills in the world right there in Herbazu, and he pulls this off and then some.
In the cup expect a super clean, super sweet cup, with a taste of fresh strawberries covered in white sugar. Then as it cools it turns into delicious milk chocolate-covered strawberries whilst remaining super sweet, still with that sprinkle of sugar.

Medium to medium dark roast. My preference is just into second crack, first few pops then drop.
