Gersain Velazco (38) and his wife Libia Guzmán Saavedra (33) have been farming at Finca La Elvira, in the mountains around the town of Pitalito, in Huila state, since they got married 14 years ago. They now have three children - Wilson Haney, Leider and Derly Julieth - who attend the local school in Pitalito.

When Gersain and Libia first moved to Finca La Elvira it was a mere three quarters of a hectare in size, with around 2000 trees in production. Over the years the couple have gradually extended the farm to 4 hectares. They take immense pride in the quality of their coffee and work tirelessly to keep standards high.

The main harvest runs from the end of September to the beginning of November, when the family takes on from seven to fifteen additional workers to help with picking. The coffee cherries are selectively picked by hand, then fully washed and dried by the sun on an elva - a traditional roof-top patio - or machine-dried if the weather is bad . The mid-crop (or 'mitaca') runs from May to June.

Don Gersain has this year (2010) planted 3000 new trees of the F6 varietal - the rest of the farm is mainly Caturra, with small number of Castilla trees. The decision to introduce F6 is something of an experiment, to see what kind of yields and resistance to disease this new varietal offers. Other ongoing projects include extending the small family house, and finishing the construction of water filtration channels.

Expect an amazingly complex cup just like the other Colombian we are stocking. There is so much happening, but the dominant flavours are sweetness, lots of sweetness, with a huge green apple acidity that for me makes one of the most stunning milk drinks of this year.
