"Pink Bourbon!?" I hear you cry! Why, yes ... it's a new one for us too! You can thank the likes of William Munoz and Caravela Coffee for this one.
William Munoz has been involved in the coffee world for more than twenty years (almost as long as Steve!), and he's spent a large part of his life producing coffee for the conventional market. However, back in 2013 – when the international prices for coffee were very low – William lost faith in the idea that any profit could come from coffee production. As the international coffee prices decreased even more and the costs of production increased, William lost faith in the sustainability of coffee too. That was until he heard about a company that bought coffee and paid prices according to the cup quality. That company was Caravela Coffee. ????
He had never heard about cup quality before, so he was keen to give them a sample to see just how good his coffee was!
“So that year,” William remembers, “I achieved an excellent score with one of my Caturra lots. I achieved 90 points. It felt very good, because this gained a much higher price compared to commercial prices.”
"A couple of months after I sold this coffee and after getting paid a great price, this same company called. They told me to pass by and pick up my premium. Premiums? What was that? They had already paid me. I found it incredible that besides being paid a great price for my 400 KG lot, after a few months, I was further paid for the same coffee. This motivated me to continue improving my quality and striving to become a better coffee producer.”
Since then, William has followed many of Caravela’s recommendations, including the way he processes his coffee, the varietals he grows on his farm and some changes to his infrastructure. These changes have allowed William to produce some amazing specialty coffees over the years! He loves to experiment and is constantly striving for the perfect cup.
In the cup this reminds me of Seville Marmalade – bitter-sweet orange, drifting in to grapefruit on the finish. On the aftertaste it shifts unexpectedly to apple peel and molasses. A complex, elegant cup.
