Throughout the generations growing coffee in the Mantiqueira mountains, where some of the best coffees in Brazil are found, Severino Breno Pereira Junqueira & sons, have been standing out year after year in the production of specialty coffees, with awards in several quality contests organized by BSCA and COCARIVE.
Located in Mantiqueira de Minas, Sitio Nossa Senhora do Carmo, together with Fazenda do Cedro, Pedra Preta, Santo Expedito and Itau, has been working for years on perfecting coffee cultivars and processes, seeking excellence in the production of specialty coffees. Its properties are located in the best terroir in Mantiqueira de Minas, at an elevation of 950 to 1,350 metres above sea level.
Harvesting is done by hand with cloths so that the coffee does not touch the ground. Soon after harvesting, the beans are taken to the patio and raked around 15 to 20 times per day for better, more uniform drying of the beans. After reaching a humidity of about 15%, they are taken to the dryer for better drying, reaching 11% humidity. Then they are taken to rest boxes, staying there for around 30 days in order to have good drying, humidity and quality uniformity in the bean to later be processed and taken to the COCARIVE warehouse.
In the cup this is a true Cup of Excellence natural. Clean tropical fruit, apricots and pineapple, all the things you expect from a washed coffee, but with a huge body, and a delicious boozy finish.
