This pulp natural is Catuaí varital and picked on sieves and cloth; the beans are pulped on the same day they are picked. The drying process begins in the cement and covered terrace, and later the beans are transferred to a drier. OK enough, what about the story and taste? This is the only place in the WORLD that you will be able to drink this farms coffee as a cup of excellence. We were able for the first time to buy this entire lot of this coffee, and I'm pleased as I don't want any other roasters to be able to give you (and possibly spoil) this great coffee. In the cup expect sweet well balanced rich coffee thats a mini fruit salad of apricot and cherry with honey to give it a smooth and sweet finish. Pay no attention the the score the international jury gave this coffee. There are times when certain coffee's don't work for certain markets so get scored accordingly. This is a UK coffee if ever I've tasted one. The jury was very heavily loaded with the Japanese who look for very different things. I'm pleased we were able to get it. This works in espresso or filter and is a real multi purpose coffee, and a must try.
The property started to have coffee as its main product when it was acquired by Gelson Bissoli and his wife, Josane, 14 years ago. Labor consists of 50/50 tenant farmers - who live in the village and provide services to the property. The Bissoli family manages the farm. Farm family management occurs frequently in other smaller properties of the region.
The average temperature in the region is 22ºC, 30ºC maximum and 12ºC minimum. Coffee processing system
According to Gelson Bissoli, his participation in seminars, symposia and talks contribute to the constant improvement of the coffee techniques used in the farm to produce good quality coffees. In addition to taking part in events, the farm is assisted in its high quality coffees production by the Sales Producers Association of Nova do Imigrante [Associação de Produtores de Venda Nova do Imigrante] (Certicafé/PRONOVA), in the person of the technical director of the entity, Evair Vieira de Melo - who monitored the work during coffee harvesting and processing, providing technical and equipment guidelines for the farm to obtain the best coffees.
