Canario is a varietal sub species strain of Bourbon. The farm Cachoeria is like an old friend of the family around here, and has more awards than you can shake an award stick at and it owned and managed by Has Beans good friend Gabriel Cavalho Dias.
Fazenda Cachoeira has been in the Carvalho Dias family since 1890 and recently celebrated its 107th crop. It is located in São Paolo State just 3 miles from the border with Minas Gerais State. It enjoys the typical characteristics of the mountainous Mogiana and Sul de Minas regions. Gabriel de Carvalho Dias is one of the leading Brazil's leading agronomists. His family owns several farms which border each other in this area.
With a total area of 417 hectares, Fazenda Cachoeira has a coffee plantation area of 165 hectares. On this farm everything is done manually since its topography does not allow any kind of mechanisation. The mill is located in the spa town of Poços de Caldas, 45 minuets from the farm.
In the cup the coffee is a mellow, creamy, full-bodied, hints of caramel and dark chocolate with remarkable balance. This is one of the finest coffees from Brazil this year, in fact one of the finest coffees in the world this year. The problem I have is this coffee keeps getting better, and more scoring system is going to run out of numbers. Amazing, huge, massive, awesome, quality, really good coffee. All words that fit this cup, a MUST try.
