I love Cachoeira as a farm and more importantly as a coffee. Gabriel the owner is a genius, who produces some of the world's finest coffee. This Canario is something very special that Gabriel has worked on for us.

The Canario varietal is a new and unique experimental varietal. The farm has planted a wide area with this varietal and has seen success inthe UK and WBC championships. Fazenda Cachoeira da Grama has been in the Carvalho Dias family since 1890 and recently celebrated its 107thcrop. It is located in São Paolo State just 3 miles from theborder with Minas Gerais State. It enjoys the typical characteristics of the mountainous Mogiana and Sul de Minas regions. With a total areaof 417 hectares, Fazenda Cachoeira da Grama has a coffee plantationarea of 165 hectares.

On this farm everything is done manually since its topography does notallow any kind of mechanisation. The mill is located in the spa town of Poços de Caldas, 45 mins from the farm.In the cup this mellow, creamy, full-bodied, has hints of caramel and dark chocolate with remarkable balance.

Last year it was one of my highest scores, this year it's a point more and one of the most complete coffees I've cupped ever for my money.
