Recent developments in Ethiopia have seen a centralisation of all coffee exports through the recently established Ethiopia Commodity Exchange (ECX). It is now virtually impossible to provide accurate information of the precise traceability of coffees as lots are anonymised upon arrival at the Exchange. This makes it harder, but also easier. It means the cupping table has to do the work. You taste the best and there is no emotional attachment to any particular coffee if it swing downward in quality.

All of the Ethiopian coffees that we purchase at Has Bean are selected first and foremost on the basis of their exceptional cup profile. This remains our guiding principle everywhere. It's got to taste good to sell.

Many thousands of bags marked 'Yirgacheffe' are sold every year but there may be significant differences between them in in terms of cup quality. Selecting by cupping cuts the wheat from the chaff.

Ethiopia is the birth place of coffee and home to some of the finest beans in the world. Every variety of coffee bean across the world can be traced back to Ethiopia. It is the only indigenous location for coffee growing. With this heratige comes the ability to provide some of the finest coffee that can truly be mind-blowingly good. This is such a coffee.

In the cup expect light, bright, grapefruit like acidity, a classic trait in fine Yirgacheffe, with a light floral/jasmine coffee blossom. But the huge surprise in this one is the peach that zooms through the mid-palate of the cup. Each and every time it happens, I'm left a little dazed as it's so unexpected. This is one of my favorite ever 'Yirgs', AMAZING! A really nice light cup that is fantastic in filter coffee, is a great breakfast coffee, and one that surprisingly works well in Espresso too.
