Description

This coffee is from our friend Luis Silva who is the owner of La Fany. The farm has produced coffee since 1870 but has been owned by Luis for around ten years. Before this his aunt owned the farm.

Siberia is one side of a mountain (the other side being La Fany) and is planted with 100% bourbon (just like La Fany). The crop is cultivated and hand-picked and provides work for 24 families from the community.

The farm is part of the Mesoamerican Biological Corridor System that stretches from Mexico to Panama. When this network of 'protected highways' enters El Salvador, it becomes part of the shade grown coffee regions. For this reason, coffee farms in this area play a vital role as a sanctuary for most of the 520 migratory and native bird species found is this part of the world. Coffee forest is the ecological bastion of El Salvador where Shade Grown Coffees act as a 'substitute forest'.

In the cup expect sweetness Chocolate and toffee with a delicate acidity that reminds me of pomegranate. Very similar to La Fany as you may expect but surprisingly different considering they are in the same place. Fun to try side by side
