Here we have something special, something rare, something to be really excited about. From Finca Argentina in El Salvador we have 5 tiny lots of experimental coffee that show what is possible when a producer has the drive to go above and beyond and say, "what if..."

This is a pre-order for 5 * 200g bags of 5 different coffees from the San Jorge tablon on Finca Argentina. Your order will be kept safe and before Christmas we will roast all 5 coffees and ship them in a special presentation box along with a booklet explaining the story behind the coffees. These boxes will contain all there is of these coffees, once they're gone there will be no more, this is a unique opportunity to taste groundbreaking work.

Finca Argentina

We have a lot of samples arriving through the door at Has Bean Towers, most of them really aren't so great but there was something about a sample from this farm back in 2010 that was very different. When we roasted it we had a feeling it was going to be amazing and it did not disappoint.

After tasting such promise in a sample we dived in and bought coffee from Finca Argentina for the first time and since that initial purchase we realised that not only did we secure a great coffee in the Has Bean portfolio, but we also found a great friend in the coffee world. Alejandro is someone who I have spent free time with as well as professional time, in him I have a partner who is willing to do crazy experiments (we won't talk about the ones we did fermenting in fruit juice, local rum and Coca Cola) and we've gone on a great journey, separating the farm into tablons, and looking at the varieties on the farm closely.

We found that Catimor (a varietal) can be delicious, when grown with care in certain contexts. We found that Bourbon grows well on many parts of the farm, but not all and these two learnings have allowed us to increase the cup quality by removing these "rogue lots" out of the coffee we buy. But we wanted to do more.

The coffees in this pack are the latest experiment, and one that gets me very excited for the future of coffee - not just for Finca Argentina but specialty coffee as a whole. Being able to influence the sweetness in a coffee, and improve its cupping score by using foliar sprays is exciting. Like all initial experiments, we need to collect the data over a few years, and more work needs to be done, but I feel we could be at the foothills of a truly important development.

On Finca Argentina Alejandro has separated the farm into 8 separate tablons (the Spanish word for plot), 7 of them growing coffee. The 5 coffees in this pack come from the highest part of the farm called San Jorge, which is about 3 manzanas in size with a production ranging from 25 to 40 bags of coffee each year. The tablon goes from 1,300 up to 1,350 m.a.s.l and is very hilly which makes it difficult to pick the coffee.

Historically, the Owner's Selection coffee came from San Jorge (Alejandro told me his grandfather used to reserve some coffee for his own personal use). Interesting that from all the farms Ale's grandfather used to own (over 250 manzanas) he picked San Jorge for the coffee he wanted to drink.

The coffees in this pack came about through experimentation Ale did at the farm, maybe you have bought Finca Argentina San Jorge Tablon in the past, but this pack has three different San Jorge's. Basically put, Ale split San Jorge into three mini-tablons (each less than one hectare in size) and did a different fertilisation schedule on each. Coffees 1 and 3 are from San Jorge mini-tablon 1, coffees 2 and 4 are from San Jorge mini-tablon 2 and coffee 3 (the control coffee) is from San Jorge mini-tablon 3.
