Description

Fazenda Irarema is around four hours drive from São Paulo in the heart of Brazil’s Mogiana coffee growing region, between São Sebastião da Grama (State of São Paulo) and Poços de Caldas (State of Minas Gerais).

It is located at an altitude of some 1,000 to 1,300 metres in the foothills of the Serra Da Mantiqueira mountain range. The area enjoys a fertile volcanic soil and a plentiful water supply - Mantiqueira derives from an old indigenous Tupi-Guarani word meaning "mountains that cry", after the many springs and streams that flow off the range.

Irarema has been producing coffee since 1893 - and some of its original Bourbon trees remain. The farm is planted out with a total of 200 hectares of Arabica, of which around 40% is Bourbon.

It was acquired by its current owner, Raymond Rebetez (who also runs the neighbouring Lambari Estate), in 2003. He has since set about modernising its infrastructure, investing in state of the art milling and warehouse facilities, while carefully maintaining the farm’s long-established Bourbon varietals. The farm is now equipped to produce small fully traceable lots, carefully prepared to protect quality. Before it is shipped the coffee is tasted by a BSCA cupper to monitor the final quality of the coffee.

As a BSCA member farm, Irarema also has strict environmental and social regulations in place. Raymond Rebetez has remarked that “Agriculture is the art of interfering in ecosystems without causing irreversible damage”. Environmental and social sustainability must go hand in hand with the pursuit of quality.

Decafs are tough to find. Good decafs even tougher. This is decafinated using the CO2 method which for me if the least harmful to the bean and the enviroment, and my prefered choice.

In the cup expect chocolate sweetness, smooth with a great mouthfeel, and a nutty afterttase. A great example of a great Brazil and a great example of a well decaffinated, well chosen coffee for the process.

Roasting Information:
Best medium to medium dark depending on the brew method used; medium dark for espresso, medium for filter. When we sell this as roasted it's just taken into 2nd crack then stopped.
